Breakfast Casserole

Man oh man! This was yummy & the husband loved it!
He ate almost the entire thing
I definitely recommend this for either breakfast or dinner

Ingredients:

4 cups of frozen shredded hash brown potatoes
1/2 cup finely chopped onion
1 cup of chopped (cooked) bacon
1 cup shredded cheddar cheese
1 can of evaporated milk
1 egg
1 1/2 tsp season salt
Directions:
PREHEAT oven to 350° F. Grease 8-inch-square baking dish.
LAYER 1/2 potatoes, 1/2 onion, 1/2 bacon and 1/2 cheese in prepared baking dish; repeat layers.
Combine evaporated milk, egg and seasoned salt in small bowl.
Pour evenly over potato mixture & cover.
BAKE for 55-60 minutes.
Uncover; bake for an additional 5 minutes.
Let stand for 10 to 15 minutes before serving.

Chocolate Pie

This takes about five minutes to make and is DELICIOUS!
If you have ever had a "dirt cup" this takes exactly the same.
My husband loves these pies so we make them quite a bit.

Ingredients:
Oreo Pie Crust
1 small box of INSTANT chocolate pudding
Milk
Cool Whip

Directions:
Make pudding according to directions on box
Refrigerate until pudding is set
Top with Cool Whip




Easy Peasy!!!

Yam Casserole

This is by far one of my most FAVORITE Thanksgiving side dishes!!
This year, I was lucky enough to make it for our family party.


Ingredients:
3 cups COOKED mashed yams
1 cup white sugar
1 cube butter
1/3 cup evaporated milk
2 eggs beaten
1 tsp Vanilla
TOPPING
1/3 cup melted butter
1 cup brown sugar
1 cup chopped pecans
1/2 cup flour

Directions:
Mix yams, white sugar, cube of butter, evaporated milk, eggs and vanilla
place in a greased 9x13 in dish
Mix butter, chopped pecans, brown sugar and flour
spread over yams.
Bake at 350 for 25-30 minutes

Owl Cupcakes

I made these little devils for a work and church party.
boy, were they a hit and so easy to make.

They were a bit time consuming...but then again I did make 50!
I couldn't get some of the Oreos to come apart evenly so some of the eyes looked a bit funny.



All you need is a box of of (any) chocolate cake mix
Chocolate frosting
Oreos
and Reese Pieces


I think it's pretty self explanatory but if you want step by step deets let me know :)

Lion's House Sweet & Sour Chicken

I've decided that we eat a lot of chicken and rice at our house.
We both really like chicken and when it's on sale, we stock up!
So here is another yummy & easy chicken recipe for you that I found on Pinterest.

Lion's House Sweet & Sour Chicken

Ingredients:
Garlic Salt
Pepper
Corn Starch
Ketchup
Vinegar
Sugar
Chicken Broth
Soy Sauce
7-8 Chicken Breasts

Sauce:
3 Tbls. cornstarch
1 1/2 cups sugar
1 cup vinegar
1 cup chicken broth
7 Tbls. ketchup
2 Tbls. soy sauce

Directions:
Layer raw chicken breasts in 9x13 glass backing pan, sprinkle with garlic salt and pepper.
Mix all sauce ingredients in a medium bowl and pour over chicken
Bake uncovered at 325 for 1 1/2 hours or until sauce is thick and dark
Turn chicken twice while baking
Serve over Rice, Baked Potato, in a Bun or in a Tortilla.
It was even really yummy just alone.

BAKED sweet & sour chicken/fried rice

OH MY WORD!
This is by far the best chicken I have ever had.
I crave it

I could have convinced the Mr. that I picked it up from an Asian Restaurant.



BAKED Sweet n' Sour Chicken

Ingredients:
3-4 boneless chicken breast
1 cup Cornstarch
2 Eggs
3/4 cup Sugar
4 Tbs Ketchup
1 Tbs Soy Sauce
1/2 cup White Vinegar
1 Tsp Garlic Salt
Salt & Pepper
Canola Oil

Directions:
Cut chicken into bite size pieces
season with salt & pepper
dip chicken into cornstarch and then into the eggs
Heat oil in large skillet & brown chicken
Place browned chicken into 9x13 baking dish
Mix Sugar, Ketchup, Soy Sauce, Vinegar & Garlic Salt in a bowl and pour evenly over chicken

Bake for one hour on 325
Flip chicken every 15 minutes


I know everyone has their own spin on Fried Rice but this is how we make ours

3 Cups of Cooked rice in a bowl
add mixed veggies or just your fav. (Mr. hubby likes peas)
Ham, however much you would like... (again Mr. Hubby likes a lot)
Bacon (opt.)
Eggs
Soy Sauce

I just guess and add more if I need more of the above ingredients.

Chicken Rollups

This is another recipe I found on Pinterest.
It was delicious and so easy!!
The only thing I would do better is cook for a little longer..SOME of the crescent rolls weren't quite done.

Ingredients:

2 (8 ounce) cans Reduced Fat Pillsbury Refrigerated Crescent Dinner Rolls
1 (10 3/4 ounce) can 98% fat free cream of chicken soup, undiluted
3/4 cup grated cheddar cheese (or any cheese of your choice)
1/2 cup milk

Filling:
4 ounces cream cheese (very soft)
2 tablespoons butter (soft but not melted)
1/2-1 teaspoon garlic powder
1 tsp minced onion flakes
2 large cooked chicken breasts, finely chopped
1/2-3/4 cup finely grated cheddar cheese
1/2 tsp seasoning salt
1/2 tsp ground black pepper
2 Tbsp. milk
1-2 cup grated cheddar cheese (for topping)

Set oven to 350°F. Spray a 9x13 dish with cooking spray. Mix together milk, 3/4 cup cheese and undiluted chicken soup (can season with black pepper if desired).

For the filling (make sure that the cream cheese and butter are very soft) in a bowl, mix the soft cream cheese with butter until very smooth, then add in garlic powder. Add in the chopped chicken, onion and cheddar cheese; mix well until combined. Add in 2 tablespoons milk; mix to combine (add in a little more if the mixture seems too dry). Season with seasoned salt or white and black pepper to taste. Unroll the crescent rolls. Place 1 heaping tablespoon chicken mixture (or a little more) on top of each crescent triangle, then roll up starting at the thicker end.
Drizzle a small amount of soup mixture on the bottom of the dish. Then place the crescent rolls seam-side down on top of the creamed mixture in the casserole.
Drizzle the remaining sauce on top and sprinkle with 1 cup (or more) grated cheese
Bake for 30 minutes

Cordon Bleu Casserole

I LOVE Chicken Cordon Bleu
When I found this recipe I knew I had to try it
It turned out so good!
Because Mr. Husband had to go to work, we ate is as soon as it came out of the oven..that's why it looks kind of runny in the picture.

Ingredients:

Rice (cooked)
Chicken
Swiss Cheese
Ham
Cream of Chicken Soup
Milk
Sour Cream
Saltine Crackers
Paprika
Garlic Salt
Parsley


Directions:
Spray 9x13 pan with cooking spray
Spread 2 cups COOKED rice on the bottom of the pan
Spread 3 cups of COOKED chicken over rice
Layer 6 slices of Swiss cheese over chicken
Layer 10 slices of CUT UP ham over cheese
Mix 2 cans of Cream of Chicken soup, 1/2 cup milk & 1/2 cup sour cream together
Spread on top of ham
Crush 10 saltine crackers then add 1/2 tsp paprika, 1/4 garlic salt, 1/2 tsp parsley (mix together)
Sprinkle on top of soup mixture
Bake @ 350 for 30 minutes

Crock Pot Orange Chicken

I found this recipe on Pinterest
(oh, how I love pinterest)
It looked DELICIOUS and I couldn't wait to try it. In the original recipe (found here) didn't specify how much chicken so I guessed..thinking I would just double the recipe. It turned out alright, but too much orange. I will definitely try it again, but follow it EXACTLY.


Ingredients:

3-4 boneless chicken breasts, chopped into small chunks
1/3 cup flour
olive oil
1/2 T salt
1 teaspoon balsamic vinegar
3 T ketchup
6 oz. frozen orange juice concentrate (thaw or throw it in the microwave for 45 seconds)
4 T brown sugar

Directions:
In a bowl, mix the orange juice, brown sugar, vinegar, salt, and ketchup
Pour the flour in a small bowl
Cover the chicken breast chunks in flour and shake off the excess.
Pour a small amount of olive oil in a skillet and brown the flour-covered chicken.
(The chicken doesn't need to be fully cooked since it's going in the crock pot)
After the chicken is done cooking, pour the pieces into the crock pot.
Then cover the chicken with your sauce mixture

Cook on low for 5-6 hours or on high for 2-3


Serve over rice

Parmesan Chicken

This is definitely an easy Parmesan Chicken recipe, but didn't turn out like I expected.
Still good, but not delicious.


Ingredients:
4 chicken breast halves, sliced in half
3/4 cup seasoned breadcrumbs
1/4 teaspoon garlic powder
1 teaspoon Italian seasonings
1/4 cup grated Parmesan cheese
2 tbsp butter, melted
3/4 cup mozzarella cheese
1 cup marinara sauce
cooking spray

Preheat oven to 450°.
Line a large baking sheet with foil and spray lightly with cooking spray.

Directions:
Combine breadcrumbs, Parmesan cheese, garlic powder, and Italian seasonings in a shallow bowl.
Melt the butter in another bowl.
Lightly brush the butter onto the chicken, then dip into breadcrumb mixture.
Place on baking sheet and repeat with the remaining chicken.

Lightly spray chicken with a little more cooking spray (this makes it crispy) and bake in the oven for 20 minutes. Remove from oven, spoon sauce over chicken and top with shredded cheese. Bake 5 more minutes or until cheese is melted and chicken is done. Serve over spaghetti or with a salad.

Homemade Butterfingers

My sister-in-law told me about this recipe and I just HAD to try it.
I've seen it all over the web, so I am sure most of you have already tried this or have at least seen it.
I was actually quite surprised how much these tasted like butterfingers



Ingredients:
1 lb. Candy Corn (YES! Candy Corn)
16 oz. Peanut Butter (smooth)
Dipping Chocolate (I used Almond Bark..found in the baking isle)

Directions:
In a microwave safe bowl melt the candy corn for 1 minute and then at 30 second intervals until melted.
Add the peanut butter and mix in with the candy corn.
If the mixture seizes, put it back in the microwave and melt for 30 seconds more.
Stir mixture with a rubber spatula until well combined and smooth.
Pour into a greased 8x8 glass dish and refrigerate until solid.
Once chilled, cut into rectangles and remove from pan.
Melt the dipping chocolate in a microwave safe bowl and dip each rectangle in the chocolate, coating all surfaces. Place on a piece of parchment paper and let set.

Chicken in Honey Sauce

I found this recipe online and was so excited to make it.
It was really easy but didn't turn out like I expected.
I'll have to try it again


Ingredients:
3/4 pound chicken (of your choice)
1/2 tsp. salt
1/4 tsp. black pepper
1/2 cup honey
1/4 cup soy sauce
1/8 cup chopped onion (or 1/16 cup onion flakes)
1/8 cup ketchup
1 Tbs. vegetable oil
1 clove garlic, minced
1/4 tsp. red pepper flakes

Directions:
Season both sides of chicken with salt and pepper, put into crock pot.
In a small bowl, combine honey, soy sauce, onion, ketchup, oil, garlic and pepper flakes.
Pour over chicken.
Cook on low for 3 hours or on high 1 1/2 hours.
Chicken into bite size pieces, then return to pot and toss with sauce.
Serve over rice or noodles.
To bake chicken as a 30 minute meal:

Dice chicken and season both sides with salt and pepper, place in 8x8 pan.
Pour sauce over chicken and bake at 350 for 20 minutes, stirring after 10 minutes.

Cinnamon & Sugar Bites



Ingredients:
1 1/3 cups all-purpose flour
1 cup crisp rice cereal (crushed)
2 Tbls. sugar
3 tsp. baking powder
1/2 tsp. salt
1/4 cup butter, cubed
1/2 cup milk
----------------------
1/2 cup sugar
1 tsp. ground cinnamon
1/4 cup butter (melted)


Directions:
1. Mix together the flour, crushed cereal, 2 tbls sugar, baking powder and salt in large bowl.
2. Cut in the butter with a fork until it's crumbly.
3. Gradually add in the milk until just moistened.
4. Roll the dough into approximately 1 inch balls.
5. Mix the 1/2 cup sugar and 1 tsp ground cinnamon in a separate bowl.
Drop balls into melted butter and roll in cinnamon sugar mixture.
6. Place balls onto a lined cookie sheet.
7. Bake at 425 degrees for 15 minutes or until inserted toothpick comes out clean.

Parmesan Garlic Chicken

If you like Parmesan cheese and garlic, this is a recipe for you :)


Ingredients:
1/4 c. olive oil
2 tsp. crushed garlic
1/4 c. bread crumbs
1/4 c. grated Parmesan cheese
2 boneless skinless chicken breasts

Directions:
Preheat the oven to 425 degrees
Heat the olive oil and garlic to blend the flavors.
In a separate dish, combine the bread crumbs and Parmesan.
Dip the chicken breasts in the olive oil, then dip them in the bread crumb mixture.
Place them in a shallow baking pan and bake for 30-35 minutes.

Homemade Mac & Cheese

This is a super fast & easy meal, but also, not the healthiest...we don't make it very often, but it sure is yummy!




Ingredients:
1 bag/box of macaroni
1 box of Velveeta Cheese
Milk
1/2 pkg of ham

Directions:
Cook Macaroni
Drain water out and put back into pot
Cut cheese in slices
Add cheese to drained macaroni
Stir until cheese is completely melted
Add milk to consistency preferred
Add ham

Stir together & enjoy!



**It's a bit cheesy at first...I actually prefer it the next day.

Green Beans with Bacon

Mmmm!! Don't those look delicious??
THEY ARE!!


Ingredients:
1/2 onion
1 lb of green beans
1/2 cup water
1 tomato
1 clove of garlic
1/2 cup cooked bacon

Directions:
Break off end of peas & throw away
Saute onion in oil or butter until caramelized
Add green beans
Add 1/2 cup water
put on lid and let steam for 15 minutes
add diced tomato, chopped garlic, & bacon
stir & serve.

**We used pre-cooked bacon


Stuffed Shells

Ingredients:
1 box of large pasta shells
1 16oz. cottage cheese
1 cup mozzarella cheese (grated)
1/2 cup Parmesan cheese
2 eggs
1 tsp parsley
garlic, salt & pepper to taste

Directions:
Mix everything together and stuff into shells.
Pour 1/2 cup spaghetti sauce into 9x13 pan
lay shells into pan and pour remaining spaghetti sauce
top with cheese
Bake at 375 degrees for 30 minutes.




Homemade BBQ Chicken Pizza

We were craving pizza
but being young, newly married college kids with NO money
we thought we would make our own.

It actually turned out AMAZING!





Ingredients:
2 boxes of Jiffy Pizza Crust Mix
2-3 Chicken breasts (Depending on how much chicken you want)
BBQ Sauce of your choice
Mozzarella Cheese
Colby Jack Cheese
Cheddar Cheese
1 small purple onion

Directions:
Make crust according to directions on box
Grill chicken then cut in bite size pieces
Cover with BBQ sauce
Spread the rest of the BBQ sauce over crust
Add chunks of chicken, cheese, purple onions
Bake according to directions on box


**You can add whatever cheese & topping you want, this is just what we used.

Santa Fe Chicken

This picture does NOT do justice to how delicious this is.

Ingredients:
1 can black beans
1 can kidney beans (drained)
3 chicken breasts cut up
2 c. frozen corn
2 c. salsa (medium)
1 block of cream cheese

Directions:
Cook on medium-high for about 3 hours.
Put on top of chips or rice.

Brownie Maddness

The picture says it all



Ingredients:
1 box of brownie mix
1 jar of marshmallow fluff
1 container of chocolate frosting

Directions:
Cook brownies as directed on box
Once finished, let brownies cool for 30+ minutes
Warm marshmallow fluff in microwave for 15 seconds
Spreed over cooled brownies
Put in fridge for 5-10 minutes
Warm chocolate frosting in microwave for 15-20 seconds
Spreed over marshmallow fluff

then enjoy the yummy goodness!!

**Side note:
-It is very rich, so I suggest cutting small pieces
-It yummiest when warm

Alfredo Sauce

Ingredients:
1 pkg of noodles
8 oz. cream cheese
1 1/2 cup milk
1/2 tsp basil
1/2 tsp Oregano
1/2 cube butter
3/4 cup Parmesan cheese
2 cloves garlic (crushed)

Directions:
Melt butter with spices, add cream cheese over low heat, stir until smooth
add milk and Parmesan cheese, warm, but do not boil.
Serve over cooked noodles.

**Sauteed shrimp & chicken can be added.


Pulled BBQ Chicken Sandwiches/Summer Salad

This is another recipe I found online, it was originally supposed to go over Baked Potatoes, but we made them into sandwiches and boy, are they DELICIOUS!!!

The first couple times we made this, I always seemed to forget to take a picture.
It usually comes out darker but I doubled the recipe because we had a bunch of family staying with us.


Ingredients:

4-5 chicken breasts
12 oz bottle barbecue sauce (your preference)
1/2 c. Italian dressing or anything similar
1/4 c. brown sugar
2 T. Worcestershire sauce

Directions:
Combine barbecue sauce, dressing, brown sugar, and Worcestershire and pour over chicken in crock pot.
Cook on low for 6-8 hours of high for 3-4.
Shred chicken in crock pot and serve on buns, rolls, croissants, etc.


YUMMMMMYYYY!!


Then for the summer salad

Ingredients:
1 box/pkg of tri-color noodles
1 bottle of Italian dressing
1 cucumber
1 can olives
1 tomatoe
(and any other vegetable you would prefer)

Directions:
Cook noodles
coat with Italian dressing
toss in cut vegetables

Ham & Potatoe Casserole

This tastes a lot like "Funeral Potatoes" but better!
;)





Ingredients:
6-7 medium sized red potatoes quartered(no need to peel)
1/2 cup sour cream
1 can cream of chicken
1 can cream of mushroom
1/2 cup chopped green onion
1 cup chopped ham
2 cups of cheese
1/4 cup melted butter
1 cup bread crumbs

Directions:
Boil potatoes for 12-15 just until tender. Pour into greased 9x13 casserole dish. Mix next 6 ingredients and mix in with potatoes (I just make it all in the pan.) Then mix melted butter and bread crumbs and sprinkle over casserole. Cook at 350 for 45 minutes.

Darn Good Chocolate Cake

The title explains it all.

Ingredients:
Vegetable Oil (for misting the pan)
Flour (for dusting the pan)
1 pkg plain devil's food or dark chocolate fudge cake mix
1 pkg chocolate instant pudding
4 large eggs
1 cup sour cream
1/2 cup warm water
1/2 cup vegetable oil
1 1/2 cups of semi-sweet chocolate chips

Directions:

1. Place a rack in the center of the oven and preheat to 350. Lightly mist a bundt pan with vegetable oil spray, then dust with flour. Shake out the excess flour. Set pan aside.

2. Place the cake mix, pudding mix, eggs, sour cream, warm water & oil in a large mixing bowl. Blend with an electric mixer on slow for 1 minute, then increase speed to medium, (scrape sides as needed). The batter should look thick and well combined. Fold in chocolate chips, making sure they are well distributed throughout the batter. Pour batter into the prepared pan, smoothing it out with a rubber spatula. Place the pan in the oven.

3. Bake the cake until it springs back when lightly pressed with your finger and just starts to pull away from the sides of the pan, 45-50 minutes. Remove the pan from the oven and place it on a wire rack to cool for 20 minutes. run a long, sharp knife around the edge of the cake & invert it onto the rack to cool completely for 20 more minutes or serve while its still warm.


**I enjoyed it more when it was warm.
**we also topped ours with powdered sugar

Teryaki Chicken

This is another favorite at our house!
Kyle actually made this for me when we were dating.



Ingredients:
2 cups brown sugar
2 cloves crushed garlic or 1 tbs garlic powder
1/4 tsp ginger or tsp fresh grated ginger
1 cup soy sauce
1 cup water

Directions:
Pour 1/2 of the mixture over boneless skinless chicken breasts.
Let it sit overnight.
Grill on bbq, discard marinate.
Serve remaining sauce with rice and grilled chicken.


Bacon Broccoli Mac & Cheese

I had not gone grocery shopping for a little while so we were running low on food & creative ideas for dinner.

I found this recipe online somewhere, and we just happen to have everything.

I was a bit nervous to try this one out but it was actually pretty good.




ingredients:
1 bag/box of pasta
1/2 pound bacon, chopped
1 8-ounce brick cream cheese, cut into chunks
2 cups milk
2 cups shredded cheddar cheese
1 cup shredded colby-jack blend cheese
Salt and pepper to taste
1 head broccoli (or 1 bag frozen, steam-in-a-bag broccoli)
1 tablespoon butter

1. Cook pasta according to directions on package in boiling salted water.

2. Meanwhile, add bacon to a high-sided skillet and cook until crisp. Drain on paper towels.

3. Drain all but about 1 tablespoon of bacon grease from the skillet. To the same skillet, add cream cheese and milk and stir to combine. Cook until cream cheese is melted and mixture is thickened and bubbling. Stir in cheeses. Taste for seasoning and add salt and pepper to taste.

4. While the sauce is cooking, steam the broccoli until crisp-tender. Stir in butter.

5. Combine cooked pasta, broccoli, and half of the bacon. Pour cheese sauce over and stir to combine. Top individual servings with the reserved bacon.

Tuna Casserole

This is a favorite at our house.

My mom made this growing up and when I introduced it to Kyle, he fell in love!




Ingredients:
1 bag/box of noodles (cooked)
2 cans tuna (drained)
2 cans cream of mushroom soup
2 cups cheese (any kind)

-Mix together

place in 9x13 casserole dish
top with crushed saltines and cheese

Bake at 350 for 30 minutes

Buttery Garlic Chicken

This is one of the easiest, fastest and yummiest chicken recipes I have found.


ingredients:
2 eggs-beaten
1 c. buttery crackers-crushed (your choice)
1/2 t. garlic salt
4 boneless skinless chicken breasts
1/2 c. butter-sliced

Directions:
Place eggs in a shallow bowl; set aside.
Mix cracker crumbs and garlic salt in separate bowl; set aside.
Dip chicken in eggs then coat with crumb mixture.
arrange in an ungreased 13"x9" baking pan; dot with butter.
Bake at 375 degrees for 40 minutes or until juices run clear when chicken is pierced with a fork.

Banana Bread

When we were first married, I would buy bananas, all but about 3-4 would get eaten.
I was scared to make banana bread, because I have never made it before.

I surprised myself with how amazing it turned out!
We ate the whole loaf in like 2 days!!


ingredients:
1 cup sugar
1 cube butter (1/2 cup)
2 eggs
3 large RIPE bananas
2 tbsp water
1 tsp vanilla
2 cups flour
1/2 tsp salt
1 tsp baking soda

You will need 3 bowls

in the 1st bowl mix:
1 cup sugar
butter
2 eggs

in the 2nd bowl mix:
bananas
2 tbsp water
1 tsp vanilla

in the 3rd bowl (largest) mix:
2 cup flour
1/2 tsp salt
1 tsp baking soda

add half of the sugar & butter mixture then half of the banana mixture to the flour bowl.
Once it is all mixed, add the rest of the banana and sugar mixtures to bowl.

Bake at 350 degrees for 1 hour.

Orange Chicken

I have loved Chinese my whole life.
loved it.
for my 'birthday dinner' I would always tell my parents I wanted to go out to a Chinese restaurant.

Well, because we are poor college students, we don't go out that often.


K's mom gave us this bottle of Orange Sauce
It's supposedly the same sauce they use at Panda Express...It doesn't taste the same but it was still really yummy.
We have been wanting to use it, but weren't quite sure how.

I found a recipe for a basic batter then just put the sauce over top.


Batter:
4 tablespoons cornstarch
¼ cup flour
1 teaspoon baking powder
½ cup water
½ teaspoon salt
1 egg1 egg white

Mix all ingredients together until smooth.
Cover and sit for 30 minutes
Add chicken to batter-coat well.

Deep fry chicken at 350 degrees for 2 minutes or until batter becomes firm.
Drain on paper towels.

Coat chicken with sauce, eat over rice and ENJOY!

Creamy Carnival Cups

We decided to invite some friends over last minute
We didn't have any treats ready then I remembered this recipe
It was a hit!

So fast and incredibly easy
and yummy ;)



Ingredients:
1 c water
1 pkg (4-serving size) Jello
*any flavor, we used strawberry*
2 c vanilla ice cream
cool whip

Directions:
Boil 1 cup of water
in medium bowl add water & dry gelatin mix
stir for at least 2 minutes until completely dissolved
Stir in ice cream with wire whisk until well blended
pour into dessert bowls/cups
refrigerate for 30 min or until set
top with whipped cream

Cream Tuna on Buscuits

This is another recipe I got from my Mother-in-law

I was surprised at how good this really was.



Ingredients:
1/4 c Margarine
1/3 c Flour
Salt & Pepper
2 c Milk
1 can tuna (drained)

Directions:
Cooke biscuits according to directions on package
Melt butter on stove, add flour, salt & pepper
Cook for 2 minutes
Add milk and drained tuna.
Bring to a boil.
Serve over biscuits

Easier than Stir Fry Chicken

I got this recipe from my Mother-in-law when Kyle & I were first married.

We liked it and it was easy.
Just how I like it

Ingredients:
3 boneless chicken breasts
Half a small onion (minced)
1 tsp soy sauce
Juice & pulp from 1 orange
1 Tbls fresh ginger
1 Tbls oil
1 tsp Dijon Mustard
1/2 c. Jelly or Pureed Jam

Directions:
Cut chicken into bite size pieces
Mix the remaining ingredients (for sauce)
then mix in chicken
coat well.
Let stand while oven heats to 450 degrees
Put chicken and sauce in a cookie sheet
do not overlap chicken
Cook uncovered for 10-12 minutes.



Serve over rice

4th Of July JELLO

Since this was mine & Kyle's first 4th of July alone I wanted to make it really fun!

The day before we went to a local campsite, roasted hot dogs & marshmallows
Then back to our place to play games and eat treats!

I got a little festive and make some Red, White & Blue jello



I first made the Red Jello according to the directions on the box
let it set
Made the Blue Jello (directions on box), poured on top of the red jello
Let it set
Then topped with whipped cream

It was a fun, easy and yummy treat on a hot summer night.

Meatball Subs


Meatballs:
1 lb ground beef
1 t. worcestershire
3 T bread crumbs
oregano
1 egg lightly beaten
salt & pepper
garlic powder

Sauce:
1 T veg. oil
Small onion (minced)
3/4 c. brown sugar
2 T. white vinegar
1 t. lemon juice
1 c. ketchup
2 T. soy sauce

Mix the egg with seasonings and bread crumbs
Add ground beef and mix thoroughly, just like meat loaf.
Shape into 1 inch balls.
Bake at 400 degree for 12-15 minutes.


For the sauce, start with sauteing the onions in vegetable oil until translucent.
Then add remaining ingredients and simmer for 20 minutes.
Stick the meatballs and sauce in the crock pot and cook on low for 4-5 hours.
You can serve over rice or noodles but we decided to make them into sandwiches and top with cheese.

They tasted just like Subway's meatball subs.

Delicious!


Spicy Tangy Chicken

This is a really quick and very easy chicken recipe.
We both loved it

The only thing I would recommend is not as much pepper
It was a bit too spicy for my liking.





Ingredients:
2 tablespoons olive oil
1 onion, chopped
4 skinless, boneless chicken breast halves
3 tablespoons ketchup
2 tablespoons soy sauce
3 tablespoons white sugar
2 tablespoons lemon juice
1 teaspoon ground black pepper
**(maybe 1/2 tsp)**

Directions:
Saute onion in oil until translucent
Add chicken, and brown lightly
Combine ketchup, soy sauce, sugar, lemon juice, and pepper; mix well.
Pour over chicken, and bring to a boil.

Cover, reduce heat, and simmer for 25 to 35 minutes.

Introduction

My name is Makenzie Hawk.
I married the man of my dreams 6 months ago.

I had lived at home until the day I got married.
So my mom always cooked.
I made cakes, desserts and other treats but I never really cooked an entire meal.

When I got married the infamous question was and still is "What's for dinner"?

I never knew what to make

I started reading cook books, food blogs, looking at recipes websites, etc.

When I found something really yummy I wanted to share it with all my friends and family
hence the reason I am starting my own food blog.

It's nothing exciting, but I hope to help some other newly married women with some quick, easy and delicious meals.
