Creamy Carnival Cups

We decided to invite some friends over last minute
We didn't have any treats ready then I remembered this recipe
It was a hit!

So fast and incredibly easy
and yummy ;)



Ingredients:
1 c water
1 pkg (4-serving size) Jello
*any flavor, we used strawberry*
2 c vanilla ice cream
cool whip

Directions:
Boil 1 cup of water
in medium bowl add water & dry gelatin mix
stir for at least 2 minutes until completely dissolved
Stir in ice cream with wire whisk until well blended
pour into dessert bowls/cups
refrigerate for 30 min or until set
top with whipped cream

Cream Tuna on Buscuits

This is another recipe I got from my Mother-in-law

I was surprised at how good this really was.



Ingredients:
1/4 c Margarine
1/3 c Flour
Salt & Pepper
2 c Milk
1 can tuna (drained)

Directions:
Cooke biscuits according to directions on package
Melt butter on stove, add flour, salt & pepper
Cook for 2 minutes
Add milk and drained tuna.
Bring to a boil.
Serve over biscuits

Easier than Stir Fry Chicken

I got this recipe from my Mother-in-law when Kyle & I were first married.

We liked it and it was easy.
Just how I like it

Ingredients:
3 boneless chicken breasts
Half a small onion (minced)
1 tsp soy sauce
Juice & pulp from 1 orange
1 Tbls fresh ginger
1 Tbls oil
1 tsp Dijon Mustard
1/2 c. Jelly or Pureed Jam

Directions:
Cut chicken into bite size pieces
Mix the remaining ingredients (for sauce)
then mix in chicken
coat well.
Let stand while oven heats to 450 degrees
Put chicken and sauce in a cookie sheet
do not overlap chicken
Cook uncovered for 10-12 minutes.



Serve over rice

4th Of July JELLO

Since this was mine & Kyle's first 4th of July alone I wanted to make it really fun!

The day before we went to a local campsite, roasted hot dogs & marshmallows
Then back to our place to play games and eat treats!

I got a little festive and make some Red, White & Blue jello



I first made the Red Jello according to the directions on the box
let it set
Made the Blue Jello (directions on box), poured on top of the red jello
Let it set
Then topped with whipped cream

It was a fun, easy and yummy treat on a hot summer night.

Meatball Subs


Meatballs:
1 lb ground beef
1 t. worcestershire
3 T bread crumbs
oregano
1 egg lightly beaten
salt & pepper
garlic powder

Sauce:
1 T veg. oil
Small onion (minced)
3/4 c. brown sugar
2 T. white vinegar
1 t. lemon juice
1 c. ketchup
2 T. soy sauce

Mix the egg with seasonings and bread crumbs
Add ground beef and mix thoroughly, just like meat loaf.
Shape into 1 inch balls.
Bake at 400 degree for 12-15 minutes.


For the sauce, start with sauteing the onions in vegetable oil until translucent.
Then add remaining ingredients and simmer for 20 minutes.
Stick the meatballs and sauce in the crock pot and cook on low for 4-5 hours.
You can serve over rice or noodles but we decided to make them into sandwiches and top with cheese.

They tasted just like Subway's meatball subs.

Delicious!


Spicy Tangy Chicken

This is a really quick and very easy chicken recipe.
We both loved it

The only thing I would recommend is not as much pepper
It was a bit too spicy for my liking.





Ingredients:
2 tablespoons olive oil
1 onion, chopped
4 skinless, boneless chicken breast halves
3 tablespoons ketchup
2 tablespoons soy sauce
3 tablespoons white sugar
2 tablespoons lemon juice
1 teaspoon ground black pepper
**(maybe 1/2 tsp)**

Directions:
Saute onion in oil until translucent
Add chicken, and brown lightly
Combine ketchup, soy sauce, sugar, lemon juice, and pepper; mix well.
Pour over chicken, and bring to a boil.

Cover, reduce heat, and simmer for 25 to 35 minutes.

Introduction

My name is Makenzie Hawk.
I married the man of my dreams 6 months ago.

I had lived at home until the day I got married.
So my mom always cooked.
I made cakes, desserts and other treats but I never really cooked an entire meal.

When I got married the infamous question was and still is "What's for dinner"?

I never knew what to make

I started reading cook books, food blogs, looking at recipes websites, etc.

When I found something really yummy I wanted to share it with all my friends and family
hence the reason I am starting my own food blog.

It's nothing exciting, but I hope to help some other newly married women with some quick, easy and delicious meals.
